La vinification en Chai 2021

Tout d’abord le Chai qu’est-ce que c’est ? En premier lieu il s’agit de l’endroit où est stocké le vin et/ou l’alcool. Mais plus précisément c’est là que se déroule la vinification, c’est-à-dire la transformation du raisin en un type de vin précis avec ses propres caractéristiques, de la vinification à la mise en bouteille. 

 

Au niveau de nos vignes, nous avons fini la fermentation alcoolique pour les vignes du Chateau Font Martin et nous sommes en pleine fermentation alcoolique pour les vignes du clos Marquet. Pour les vins blancs et rosé, ils sont en cours de fermentation à basse température, ce qui la rend plus longue.

 

Tous les jours nous contrôlons la densité et la température de nos vins, c’est-à-dire que nous contrôlons le taux de densité du moût afin que le sucre se transforme en l’alcool. Pour cela, la température doit augmenter pour que la densité diminue.

It's under a beautiful sun, at Clos de Marquet, that we rammed by hand, in family, an exceptional white  harvest with a healthy state of maturity that we didn't see since a long time.The 2019 millesimal promise to be hopeful.In the next days, we will follow up the vinifications and discover how to raise the Clos des Marquet.

The 2019 millesimal in red at Saint-Paul (Domaine de Milius) surprised us by its quality and quantity of grape harvest, specifically in the Merlot grape. The grape harvest was healthy with a optimal maturity that we have not see since 2010. 

​

Comme regularly in our website to follow the evolution of the millesimal. 

The 2019 prune

Who said beginning of the years said prune !

 

First of all, it's important to specify what is the purpose of the prune. The prune is used to control the vine growth. For that we used a method of prune which is called the charge. She also permit to increase the wine quality in decreasing the number of the cluster. The wine prune is a careful operation, with technical which is very important for the quality of the futur harvest and for the perenniality of the vine. To conclude, we need to concentrate and maintain the vigor of the vine to produce fruits.

After the prune it's the wood shoot in the vine. It's important because if we don't do this, the year after will be disastrous, because this may damaging the new sprout.

 

Finaly, the carassonage, namely, the operation of control and maintenance of pickets and wires which constitutes the trellis who support the vine. It's done in winter, during the operation named "pliage".

We were all waiting for him because it's an important moment in our vines life. 

To pamper and cherish them are our most beautiful goal to realize a prune according to the load and the vigor of our feet.

During other people are in hollidays, with us, secateurs replace ski poles !
